Old Fashioned Peanut Butter Balls
These old fashioned peanut butter balls are a delicious snack that's easy to grab-and-go. I love eating them plain but you can also coat them in chocolate for a more dessert like snack. Bonus - they only have 4 ingredients!

Ingredients
1/2
cup
organic creamy peanut butter
salted
2
tablespoons
pure maple syrup
1 1/2
tablespoons
coconut flour
can sub 2 tablespoons all purpose flour
1/4
teaspoon
vanilla extract
optional
Instructions
Line a baking sheet with
parchment
paper. I like using a
half sheet
pan for this recipe.
Combine the peanut butter, maple syrup, and vanilla in a bowl and mix until well combined.
Stir in the coconut flour until a dough like ball is formed.
Using a 1 tablespoon cookie scoop, scoop out the dough and use your hands to form them into a ball.
Place the peanut butter balls onto a parchment lined baking sheet, and chill in the fridge for 1-2 hours or until the balls have firmed up.
Store in an airtight container for up to a week in the fridge.
Notes
If using unsalted peanut peanut butter, add a big pinch of salt along with the coconut flour and stir well.
