Almond Flour Lemon Cookies
These almond flour lemon cookies are paleo, vegan, and gluten free! They're naturally sweetened with maple syrup and made with fresh lemon juice.

pure maple syrup
fresh lemon juice
can sub melted coconut oil
about 2 lemons
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Combine the almond flour, tapioca, salt, and baking powder in a medium sized mixing bowl and whisk to combine.
Add in the lemon juice, lemon zest, avocado oil, and maple syrup and mix until a wet dough is formed.
Use a 1.5 tablespoon cookie scoop to scoop the dough onto a parchment lined baking sheet.
Bake in the oven for 11-13 minutes and let the cookies cool on the pan.
