Almond Flour Peanut Butter Cookies
These almond flour peanut butter cookies are so easy to make and naturally gluten free. Eat them plain, or add in some chocolate chips for a delicious, healthy cookie!

Ingredients

creamy salted peanut butter
1/3
cup
avocado oil
can sub melted coconut oil

tablespoons
pure maple syrup

egg
1
teaspoon vanilla extract
1 3/4
cup
almond flour
1/2
teaspoon
baking soda
1/2
teaspoon
sea salt
1/2
heaping cup chocolate chips
optional
Instructions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a bowl, combine the peanut butter, oil, egg, maple syrup, and vanilla extract and whisk until well combined.
Add in the almond flour, baking soda, and salt and mix until a dough is formed.
Mix in the chocolate chips if using.
Using a 1 1/2 inch cookie scoop, scoop the dough onto your lined baking sheet.
Bake the cookies for 10-12 minutes until the edges are golden brown. *11 minutes was perfect in my oven but all ovens vary.
Leave the cookies on the pan to cool. Enjoy!
