1/4cupcashewssoaked for 2 hours (for best results)
3pitted medjool dates
1/2tablespoonraw cocao powder
1/4teaspoonvanilla extract
pinchof salt
1/4teaspoonpumpkin pie spiceoptional
Instructions
Drain the water from the cashews.
Place all the ingredients in a high-speed blender and blend until smooth and creamy. About 3-5 minutes.
Gently warm on the stove if your blender is unable to heat up the hot chocolate.
Notes
Make sure to drain the cashews before adding them to the blender. This recipe is pretty customizable. If you want it sweeter, add another date or two. If you want it more chocolatey, add some more cocao powder a teaspoon at a time. If you don't have a high-speed blender, it may take longer to achieve a smooth consistency. Leave our the pumpkin spice for a plain hot chocolate. If your dates aren't soft, soak them in warm water for 10 minutes before blending.
