Heat a greased 8 inch skillet over medium low heat and turn your broiler on high.
Whisk your eggs together in a separate bowl and set aside.
Slice the grape tomatoes in half and grab rinse your handful of spinach.
Once your skillet is evenly heated, pour in your eggs, and then add in the tomatoes and spinach - or whatever else you feel like adding into your omelette.
Once you see all the edges of the omelette cooked (will take a few minutes) move your skillet to the broiler to finish cooking until the eggs have set and are cooked through.
