Pumpkin Spice Energy Balls (Paleo, Vegan, GF, DF)
These pumpkin spice energy balls are the perfect fall snack. They're so easy to make and full of fall flavors like pecans, pumpkin spice, and maple! They're also paleo, gluten free, dairy free, and vegan.

Ingredients
1 1/4
cup
gluten free oats
can sub almonds or any other combination of nuts for strict paleo
1 1/4
cup
raw pecan halves
1
tablespoon
avocado oil
or any other neutral tasting oil
1 1/2
teaspoons
pumpkin pie spice
1/4
cup
maple syrup
1/4
heaping teaspoon
sea salt
Instructions
Line a
baking sheet
with parchment paper and set aside.
Insert the metal "s" blade into your
food processor.
Add in the pecans, and pulse a few times to break them down a bit before adding in the other ingredients.
Next, add in the salt, pumpkin pie spice, oats, oil, and maple syrup.Mix in the food processor until well combined and the mixture forms a dough.
Using a
cookie scoop
, scoop the dough onto the parchement lined baking sheet.
Roll the dough into balls using your hands, and place the baking sheet in the freezer for at least 30 minutes.
Store in the freezer in an airtight container for up to 3 weeks.
Notes
I like these best straight from the freezer. They can also be eaten as is or from the fridge.
