Juice the lemons and put the liquid into a liquid measuring cup.
Peel the ginger and slice it into 1/8 inch slices.
Place 2-3 slices of ginger in each compartment of the ice cube tray.
Poor the lemon juice into each compartment of the ice tray, covering the ginger.
Add some lemon zest to each compartment of the ice tray (optional)
Freeze overnight
Release the ice cubes and store in the freezer in an airtight container.
Notes
I like to add half a lemon to my herbal tea (or warm lemon water) which equals one full compartment in my ice cube tray. Because the size of ice cube trays vary, I recommend squeezing the desired amount of lemon juice into one compartment to start, taking note of how full it is. Then, when you poor the remainder of the lemon juice in the tray, you'll know how full to fill it. If herbal tea isn't your thing, use this hack to make warm lemon water! It has great benefits when consumed regularly. Most tea bags are made of plastic, which I try to avoid. That's why I stick to my handy dandy tea infuser ball.
