Almond Butter Cups (Crunchy!)

These crunchy almond butter cups are good guys.  SO GOOD!  So good in fact, my kids have been begging me to make them every single day.  I’m thinking we’ll all go on an almond butter cup diet. Who wants to join me? 😏

I love these sweet treats because they’re easy to make, no bake, and fun!  Sure, it may be easier to buy almond butter cups from the store, but by making them at home, you have total control over the ingredients, and you get the satisfaction of making them yourself!

For the middle filling, I used my crunchy almond butter recipe.  I recommend using this recipe because first, it’s absolutely delicious.  And second, because it’s thicker than store bought.  Having a thicker filling will make the cup more sturdy – but really, you can use any almond butter you’d like.

Ingredients For Almond Butter Cups

– 1/2 cup crunchy almond butter

– 3/4 cup dark chocolate chips (or favorite chocolate bar, chopped)

– 1 tablespoon maple syrup (or more to taste)

– flaky sea salt (optional)

How to Make Almond Butter Cups

1) Start by placing 12 mini muffin liners into a mini muffin tin.
2) Begin melting the chocolate chips over a double boiler.
3) Place 1 teaspoon of the melted chocolate into the bottom of one of the liners.
4) Using the back of a spoon, spread the melted chocolate up and around the sides of the liner so it’s evenly coated.  Repeat this step until all the muffin liners have been coated in chocolate.
5) Place in the freezer for about 10 minutes or until hardened.

6) While the chocolate is hardening up, prepare your almond butter layer by mixing the almond butter, maple syrup, and salt (if using unsalted almond butter)
7) Remove the muffin tin from the freezer and place 1/2 tablespoon of the almond butter mixture into each of the frozen chocolate lined cups.
8) Place a 1/2 heaping teaspoon of the remaining melted chocolate over the top of the almond butter mixture and spread it around till it’s smooth and even.
9) Return the mini muffin tin to the freezer and freeze for 10-15 minutes.
10) Store in the fridge or freezer.

These dark chocolate crunchy almond butter cups are paleo, vegan and absolutely delicious! They're a great way to enjoy a healthy homemade treat.

  • Place in the freezer for about 10 minutes or until hardened.
  • While the chocolate is hardening up, prepare your almond butter layer by mixing the almond butter, maple syrup, and salt (if using unsalted almond butter)
  • Remove the muffin tin from the freezer and place 1/2 tablespoon of the almond butter mixture into each of the frozen chocolate lined cups.
  • Gently press the mixture into the cup to flatten the top.
  • Place a 1/2 heaping teaspoon of the remaining melted chocolate over the top of the almond butter mixture and spread it around till it's smooth and even.
  • Return the mini muffin tin to the freezer and freeze for 10-15 minutes.
  • Store in the fridge or freezer.
