Summer time calls for delicious frozen treats!  This popsicle recipe is bursting with strawberry and lime flavor and is perfect for those hot summer days.

Popsicles are a fun way to enjoy a treat during the summer time. There’s no need to turn on the oven and heat the house up.  Just blend in your high speed blender, pour into molds, freeze for a few hours – and voila!  You’ve got yourself a popsicle!  There’s so many cute popsicle molds to choose from these days.   These are the popsicle molds I used.  I also have these ones.

Popsicle Recipe Ingredients

These strawberry lime popsicles only have 4 ingredients!

  • Strawberries
  • Coconut water (unsweetened)
  • Fresh lime juice
  • Honey

I love a recipe with minimal ingredients.  In my book, simple is always best.

How to make popsicles

  • Prepare the strawberries by washing them and removing the green tops.  I love this strawberry huller to help with that process!  There’s no need to chop them.  The blender will do all the work.
  • Add the strawberries to the blender along with the lime juice, coconut water, and honey.
  • Blend on high for a few minutes until the mixture is smooth.
  • Pour the strawberry lime mixture into the popsicle molds and freeze for 6-8 hours or overnight.

Strawberry lime popsicles are a delicious frozen treat perfect for summer! These popsicles are dairy free and paleo.

INGREDIENTS

  • 16 oz fresh strawberries (stems removed)
  • 6 tablespoons fresh lime juice (about 3 limes)
  • 1/2 cup coconut water
  • 3 tablespoons raw honey

INSTRUCTIONS

  • Prepare the strawberries by washing them and removing the green tops.
  • Add the strawberries to the blender along with the lime juice, coconut water, and honey.
  • Blend on high for a few minutes until the mixture is smooth.
  • Pour the contents of the blender into the popsicle molds and freeze for 6-8 hours or overnight.
